Deluxe Christmas Fruit Cake - 800g

This quality Christmas cake is made with the finest of ingredients from a cherished family recipe.  We use high quality gluten free flours, real butter, fresh eggs - the mixture of fruit is soaked in brandy for 24 hours.  The cake is decorated with almonds and cherries and packaged carefully for shipping.   Makes a great gift!

Ingredients:

 

mixed fruit: cherries, citrus, raisins, almonds, butter, sugar, rice flour, potato starch, tapioca starch, spices, baking powder, eggs.brandy
Care of your Fruit Cake/ Gluten Free Christmas Cake- optional.
  • When it is cold 'feed' the Christmas cake. Make small holes in the top and bottom of the cake with a thin needle or cake tester, then spoon over teaspoonfuls of brandy or rum to soak into the cake through the holes.
  • Now wrap the cake in a double layer of greaseproof paper, then either wrap it in two layers of tin foil or keep in an airtight tin. 'Feed' the Christmas cake (as described above) at odd intervals I 'feed' mine once every two leading up to Christmas but you can 'feed' it weekly if you wish.
  • If  you don't want to soak it in alcohol, just wrap it tightly and keep in a cool place for a few weeks.  I keep mine in the fridge.
